  1. IRISH WHEATEN BREAD

    Ingredients
    350g whole meal flour.
    100g plain white flour.
    370g 2% natural yogurt.
    1 heaped tea spoon bicarbonate of soda (Not baking powder).
    1- 2 tea spoons of salt to taste. Depending on your salt intake I use one.
    One 1/4 (quarter) glass of bottled sparkling soda water.
    Directions
    1. Pre- heat the oven to 200 degrees C 400F Gas 6
    2. Sift flours, salt and bicarbonate of soda together in a large bowl and mix….
    3. Make a well in the center of the flour mixture; add three table spoons of yogurt in the center of the mix. Then pour the quarter glass of sparkling soda water into the carton of yogurt, mix well.
    4. Then slowly pour the yogurt soda mixture into the center of the flour to make dough. Using a flat bread knife to mix all together (you may need to use your hands, but don’t over knead or it will produce a tough loaf).
    You just want to mix the ingredients together.
    5. Form into a ball.
    6. Place onto a greased baking tray.
    7. Cut half way through the bread with a sharp knife then again to make the other way to form a cross. This splits the bread into crusty sections.
    8. Cook for 30 minutes, if you don’t like your bread very crusty cover with cooking foil for the last 5 minutes or so.
    9. The bread is done when it sounds Hollow when Tapped.
    10. Let it cool on a wire rack for 10- 15 minutes before serving.
